,

Happy Friday, AmPark!

I hope this weekend brings us just enough snow to have some fun outside but not to be too much trouble!

Please see the most recent updates below, including lunch and recess plans, the February lunch menu, a tasty recipe from Chef Ricardo, Middle School admissions, an NYU dental program opportunity and information about Roads to Success!

Lunch and Recess Update

Due to the change in temperatures and park conditions, as well as the continued need to keep classes in pods, students will continue to have active indoor lunch and recess routines.

Roads to Success Enrollment Still Open

  • Enrichment activities (visual or performing arts, sports and team building, science, service learning, and more)
  • Academic skill support (homework help, reading activities, or academic games)

Tasty Happenings at AmPark

Enjoy the recipe for butternut squash soup that students have been learning about and sampling with Chef Ricardo this week! We are also attaching the February lunch menu!

This week chef Ricardo made Butternut squash soup for the children and presented the ingredients as well. If you would like to make this delectable soup at home, the ingredients are listed below.

Butternut Squash (Soup serves 4-6 ingredients)
3 cups fresh butternut squash, peeled, seeded, and cubed
2 small onions, peeled and quartered
2 granny smith apples, peeled, cored and cubed
2 Tbsp olive oil
1 1/2 tsp salt
1 tsp black pepper
1 tsp fresh thyme, chopped
6 cups water or vegetable or chicken stock

Procedure to prepare squash, use a vegetable peeler to remove skin. Trim ends, cut squash in half lengthwise and remove seeds with a spoon. Cut into cubes. Preheat oven to 400 degrees. Coat squash, onions, and apples with the oil. Season with salt and pepper. Place on a baking sheet and roast in preheated oven until tender, about 15 to 20 minutes. In a large stockpot, add roasted vegetables and apples. Add thyme and water or stock. Bring to a boil, lower heat and simmer for 30 minutes over medium heat. Using an immersion blender, blender or food processor, puree the soup. If using a blender or food processor, work carefully in batches. Taste for seasoning, add more salt, and pepper if necessary.
